Menus can be changed by a FULL ADMIN using the Menus Edit configuration found in the System's menu. For the Applicant permission level, there are sub-menus that can be made invisible.
The fields shown on the main page of the Applicant Portal can be edited via the Student Summary screen of a FULL ADMIN user. Simply do Edit Form Labels if you want to rename the labels of the field or Edit Form Fields if you want them hidden or shown in the Applicant Portal.
